White pepper is made from berries that have been allowed to fully ripen, while black pepper is made from green berries. Once the berries are harvested, they are soaked for about 10 days before the outer hull is rubbed off. The remaining berry is dried and ground into a powder. Their flavor, while still distinctly peppery, is quite different from that of black peppercorns. The soaking gives this pepper a mellow, slightly fermented taste, without the sharp bite of black pepper. Packaging materials such as glass jar, steel jar, plastic jar, laminated bags, aluminum bag and poly bags are used.
